Risotto is one of the most versatile recipes you can cook. But there are some definite do's and dont's as far as good risotto is concerned.

We explore those questions by actually trying them out and seeing what the results are. Some are surprising!


CAN YOU FREEZE A RISOTTO?

 

The simple answer is yes, of course you can freeze a risotto. The real question is what does a risotto taste like after it has been frozen? First, there's nothing in a plain risotto which will go bad if you freeze it. On the right is a frozen mushroom risotto straight from the freezer.


To give our frozen mushroom risotto the best chance of success we slowly defrosted it by placing it in cool water. A two portion frozen risotto took about four hours to defrost.
 
 

We then divided it in half and tried two experiments. First we heated a pan to a medium heat and re-heated the risotto. This took about five minutes, we stirred several times during the re-heating.
The result was most definitely not a risotto. The rice had lost all its bite and was a bit like a savoury rice pudding. We don't recommend this at all!

 
Next, we placed the defrosted risotto in a microwave and cooked it for 2 minutes on full power. The result of this experiment was even worse. Although it looked reasonable, the structure of the rice had been destroyed totally. It looked like a risotto but had the texture of mush.

So the answer to the question "can I freeze risotto" is yes but it will no longer have the texture and taste of risotto. If you have leftover risotto we suggest you place it in the fridge and then read the first two links below. You will have significantly better results.
