RISOTTO ALLA MILANESE |

| Milan is the home of the risotto and this recipe, risotto alla Milanese, is
known all around the world. It is the basic risotto recipe with the addition of
saffron and, optionally, bone marrow. It's simple to make, takes around 45
minutes to cook and the result is a classic risotto which can be served as a
starter or as a main meal.

Another vegetarian risotto, this one uses porcini and chestnut mushrooms for
a truly natural mushroom flavour. The porcini mushrooms may be a little
expensive but they are worth the money.
