The basic risotto recipe is a delicious meal in itself. But the beauty of risotto is that numerous combinations of ingredients can be added to introduce new flavours, textures and colours. Don't just stick to the recipes we have below, tweak them to include ingredients you like best.

 

 

BACON AND PEA RISOTTO
A very tasty risotto which can be served as a main meal or a starter. Lots of colour from the red peppers and peas and lots of flavour from the bacon. Combine that with the classic white risotto recipe and you have a definite winner. Click here for the recipe.

RISOTTO ALLA MILANESE

 

Milan is the home of the risotto and this recipe, risotto alla Milanese, is known all around the world. It is the basic risotto recipe with the addition of saffron and, optionally, bone marrow. It's simple to make, takes around 45 minutes to cook and the result is a classic risotto which can be served as a starter or as a main meal. Click here for the recipe.

PORCINI RISOTTO  

Another vegetarian risotto, this one uses porcini and chestnut mushrooms for a truly natural mushroom flavour. The porcini mushrooms may be a little expensive but they are worth the money.

PESTO RISOTTO  
Another classic but simple risotto, this pesto risotto originates from Genoa in Italy, the home of pesto.

It's fine to use ready made pesto sauce but our recipe captures the magic of basil, pine nuts, olive oil and Parmesan cheese by making fresh pesto sauce. Click here for our pesto risotto recipe.

   
WHITE RISOTTO  
White risotto is the basic recipe on which so many other risottos are based. But never forget the simple pleasures in life and white risotto a delicious simple pleasure.

CHICKEN RISOTTO  
This risotto is basically a vegetable version with the addition of chicken. It's a very good choice if you have any left over chicken from a previous meal.

Simple to cook and very tasty, this is an economical use of leftovers. Pork can also be substituted for the chicken.

RISOTTO AL SALTO  
Risotto al salto are commonly called rice pancakes. They are an ideal way of using up leftover risotto which has been stored in the fridge. Ingredients are leftover risotto, eggs to bind the mixture and a little olive oil. These are so delicious and they make a great starter or tapas type meal. Click the picture for the full recipe.

RED PEPPER AND PEA RISOTTO  
This is a simple white white risotto splashed with the colour of peas and chopped red peppers. Click the picture for the full recipe.

Most vegetables can be added to a basic risotto to bring it to life. They also add texture and additional taste. Simply add them to the white risotto in enough time to warm them through.

INDIAN STYLE RISOTTO  
A one pot dish using Basmati rice instead of a risotto rice. Not a true risotto but an unusual and very tasty dish nevertheless. Click here for this recipe.  
   
TOMATO AND SAFFRON RISOTTO  
This is a variation on the risotto alla Milanese risotto. As with all Milanese risottos saffron is used to colour the rice. Sun dried tomatoes are added for their rich taste of the summer sun.
